List Your Ingredients


  • 2 fennel bulbs, thinly sliced (fronds reserved if desired)

  • 1 cup grated parmesan cheese

  • 1 handful fresh dill, finely chopped

  • 2–3 tablespoons mayonnaise (to taste)

  • Juice of ½ lemon

  • Salt and black pepper, to taste

  • Toasted seeds, for finishing (sunflower, pumpkin, or mixed seeds)


How to Make Crunchy Fennel and Dill Salad


  • Prep the fennel Thinly slice the fennel bulbs using a sharp knife or mandolin.

    Add them to a large bowl.

  • Add the flavour Sprinkle in the grated parmesan and chopped dill.

  • Dress the salad Add 2 tablespoons of mayonnaise, lemon juice, salt, and black pepper. Toss gently until everything is lightly coated. Add more mayo if you like it creamier.

  • Finish with crunch Just before serving, sprinkle generously with toasted seeds for texture and nutty flavour.
